Officially, summer begins next Friday. Aside from this being my favorite season, it’s also one of my favorite times of year due to the abundance of fresh fruits, vegetables and warm weather meals.
While I do savor a bowl of hot creamy oatmeal, when the mornings are sweltering, the last thing I want to do is sweat in between bites.
Lately, I’ve been enjoying some of my most adored warm weather breakfasts and I thought I would share these with you in case your pressed for ideas.
Eggs, English Muffin and Citrus
This has become a Sunday breakfast of choice. For some unknown reason, I only seem to crave eggs in the morning once a week. I usually scramble one whole egg and two whites in a teaspoon of coconut oil. I absolutely love the Trader Joe’s Whole Wheat English Muffins and always go with a smear of sunflower seed or almond butter. This meal just doesn’t seem complete without some kind of fruit and citrus right now is in season and delicious! Grapefruit is my citrus of choice.
This meal is fully balanced with protein, fats, carbohydrates and fiber, not to mention, it keeps me full for hours!
The hardest part about making overnight oats is trying not to eat it before morning. I love making this ahead-of-time meal and only wish I remembered to do it more often.
It’s simple – I take 1/2 cup of raw oats and mix it with 1/3 cup of greek yogurt and a splash of milk. I also add in a tsp of chia seeds as they expand in the liquid mixture and make a doughy and voluminous bowl. In the morning, I’ll add in sliced fruit and top it with almond butter and granola or raw nuts.
Knowing this waiting for me in the fridge in the AM makes me want to go to bed as early as possible.
This couldn’t be easier and it’s always so so good! You grab your favorite flavor of yogurt (mine happens to be Chobani Peach) and pair it with whatever fruit you have on hand. Berries are in season right now so I always seem to have them around. Another favorite summer fruit is nectarines which go so well in a yogurt bowl. I like some texture in there too, so granola is the perfect addition. You can also add a spoon of nut butter in order to add more healthy fats and protein. This also works well for an on-the-go breakfast!
Cookie Dough Cereal
I can’t take full credit for this as I stole the original idea from Gina but man it’s delicious! If you think eating raw oats sounds odd, think again!
I pour 1/3 cup of raw oats in a bowl and mix in a tsp of chia seeds and a tbl of vanilla protein powder. Then I take a big spoon of sunflower seed butter and cut this into the oat mixture. (Imagine you’re cutting cold butter into the dry ingredients of a baking project) Then, pour milk over the mixture and let it sit for a few minutes so the oats soften just a bit. Top with fruit and be prepared to fall in love with your new favorite cereal!
Waffles are always a fantastic option but in the summer, I find frozen waffles are much more enjoyable to make than pulling out the waffle iron. My brand of choice is Kashi 7 Grain or Whole Foods Multi-Grain. Sometimes, simple syrup and a sliced banana are fitting, but if I’m aiming to fill up on nutrients, I’ll top them with Greek yogurt or cottage cheese, fresh fruit and granola.
There you have it! Some of my favorite warm weather breakfasts. Of course, I’ll always be able to rely on a bowl of cereal, but when summer hits, I like to mix things up with a variety of fresh, wholesome and seasonable ingredients.
