I’m not even kidding when I say this is one of the most creative but delicious pizzas I’ve ever made.
I mean, roasted beet pesto? Yes please!
Let me tell you a little story about how this came to be. Earlier this week, my dad stopped by my house with a big haul of vegetables he had purchased and wanted to share. In that haul were a bag of fresh beets, just waiting to be transformed. Now I personally adore fresh beets, but I admit, they are kind of a pain to cook. First, you have to roast them forever, and then peeling and chopping them is incredibly messy. BUT….it’s worth it.
So I immediately cooked up the beets to get the hard part out of the way and then was left with a massive amount of fresh beets and not a clue how to use them. I pureed a few for Grayson and in that process thought how pretty it looked. How could I use this puree in my own cooking?
Oh I forgot to mention, my dad also brought me a ton of fresh basil. So…..pureed beets, basil….pesto, ding!
Every time I make pesto my mind gravitates towards putting it on a pizza so that is exactly what I did. The goat cheese was a no brainer because, beets and goat cheese are simply perfect together. Then I realized my pizza needed some green so kale it was.
And with that long winded story that I’m sure you all cared to know, came this beautiful Roasted Beet Pesto and Goat Cheese Kale Pizza. The flavor here is really in this amazing pesto. The goat cheese balances out the sweetness of the beets and the kale looks pretty and adds some nice nutritional incentive. And if you take the leg work out roasting the whole beet thing, this is actually super easy to make.

Roasted Beet Pesto Goat Cheese and Kale Pizza
For the Pesto:
- 1 cup roasted beets, peeled and quartered
- 1/2 cup torn basil
- 1/4 cup walnuts
- 2 tsp minced garlic
- 1/4 cup olive oil
- salt and pepper to taste
For the pizza:
- 1 small whole wheat pizza crust (I used Naan)
- 1/3 C goat cheese
- 1 cup kale, chopped into small pieces
To make the pesto, combine all ingredients except the oil into a food processor. Blend for a few seconds to combine everything and then slowly pour in the oil. Mix together for about a minute or until all combined into a smooth consistency.
Top the pizza with the pesto and then kale. Top with goat cheese and cook in a 450 degree oven for 10-15 minutes.
