A few months ago, had the pleasure of escaping to Mexico. Upon the many lavish perks of residing in an all-inclusive resort for 7 days, the one that I found to be the most fulsome was the 24-7 drink service. Not that I usually find myself sipping on pina coladas at 2 o’clok in the afternoon, but when in the tropical atmosphere of Mexico, it’s quite fitting to always have something frozen in one hand to sip away your cares.
It was on this trip that I developed a deep love for the frozen mojito. The essence of fresh lime and mint, blended together into an icy beverage was the perfect late afternoon refreshment on a hot pool day. When I got home from Mexico, I was determined to recreate this tasty treat, but with the realistic approach of actually being able to enjoy it in the middle of a workday.
After a few substitutions, I came up with the perfect faux mojito recipe that is healthy enough to suffice as a post workout snack or even a light breakfast on the go. Silk Pure Coconut Milk gives this blended beverage a hint of creamy tropical flare and cuts down on all of the excess calories that one would endure from the full alcoholic version.
I may not be able to carelessly sip on frozen mojitios every afternoon back home, but I can take myself back to paradise with this good for you smoothie. Maybe I’ll even add an umbrella, you know, just for the sake of a sweet escape.
Mint Mojito Smoothie (non alcoholic)
½ cup Silk Pure Coconut Milk
1 ½ cups plain Greek yogurt
2 tbsp fresh lime juice
¼ cup fresh mint leaves
1 ripe banana
½ of an avocado
½ cup crushed iced cubes
Place all ingredients into a blender and process until smooth and creamy.
