Well it’s been quite some time since I’ve composed a WIAW post. For awhile, my food choices were boring, and then I started to loose interest in documenting my eats mainly because I was just so happy to be eating a semi-normal diet again. But for some reason, I picked up my camera the other day and snapped just about every single meal. Go me!
To be honest, I’ve been all over the place with my meal choices. Some days I’m really hungry and other days, I have a very little appetite. Some days I want more “normal” meals and other days I want to snack all day. One thing is for sure, the bigger my stomach gets, the less room I have in there. I’ve reached the point where I will be so uncomfortably full from eating a full meal that it’s actually painful. So I’ve been trying to focus on smaller portions and so far, it’s been working.
Here is an example of my daily eats right now:
Greek yogurt with a banana, berries and 1/2 of a TJ’s gluten free blueberry muffin
Cashews and an apple
Homemade curried chicken salad over arugula with a 1/2 a bagel thin
Homemade Chicken Pasta Salad with Garlic Bread
And that about sums it up. I’d say this was a pretty “normal” day for me right now. My portion sizes may be smaller but I’m trying to eat more snacks to supplement, while still attempting to get a good balance of nutrients. Overall, not too shabby!
